Roasted Potatoes

Roasted Potatoes

These are a family favorite! If there are ever leftovers they make great home fries the next day.

8-10 red skinned potatoes (washed and cubed)
1 medium onion
1 Tbl chopped garlic (this is approximate, we love lots)
Italian seasoning
Adobe all season
salt, pepper, paprika
Cayenne or chili pepper powder

In a large frying pan heat oil and saute onions and garlic until soft. Add potatoes and all other ingredients. I didn't write exact amounts because I do it to taste. Sometimes I don't add the cayenne at all. Sometimes I add extra of everything! Cover and cook until potatoes are tender, stirring occasionally.
