Carrot Soup
This is a sweet soup and so easy to do. Plus lots of vitamin A is found in carrots!
1 bag of baby carrots ( chopped)
4 cups of chicken broth
1 small onion (chopped)
2 Tbs crushed garlic
2 tsp parsley
1 tsp cilantro (optional; I like it my son thinks it tastes like soap!)
1/2 cup heavy cream
1/2 cup sour cream
In a stock pot saute` onion and garlic until tender. About 4-6 minutes. Add spices, broth and carrots and bring to a good simmer. Simmer until carrots are tender about 25 minutes.
Place soup in a blender, you may need to do this in batches depending on blender size. Puree` till smooth. Put back in the pot add the sour cream and heavy cream continue to heat if needed. Add salt and pepper to taste.
